Pomegranate salad



Ingredients:
1. 1 pomegranate seeded
2. 1 soft pear, chopped
3. 1/2 tsp grated fresh ginger
4. 1/2 cup chopped spinach
5. olive oil and lemon juice, salt and pepper. 
6. 1/4 cup walnuts, crushed into crunchy tiny bits

Method:
1. Toss all ingredients together
2. Marinate for 2 hours!







Madhuram's Vegetarian chili

1 cup bulgur wheat (boil 6 cups water, bring to boil, add this in, 15 mins).  1 can black beans, 1/2 cup corn, 1 can pumpkin puree, sauteed 1/2 cup onion and 1 cup red or green bell pepper and 1 zucchini, 1 - 2 tsp garlic, 1 tsp chili powder (makes it mild-medium), 1/2 dabba chili flavoring from Central market (it doesn't list the spices, but I suspect it's mostly cumin and jalapeno).

Cauliflower piquant

Ingredients:
1. 1 head cauliflower
2. 1 red bell pepper
3. 1/2 cup green olives
4. 1 tub salsa cheese spread
4. 1 tsp olive oil
5. salt and pepper

Method:
1. Saute chopped cauliflower and chopped red bell pepper in a tsp of olive oil for 2 mins. Add 1/4 cup water. Cover with lid.   We don't want the veggies to get too soft.
2. After the above softens (in about 3 mins after adding lid), add olives, saute for a few seconds, and add the tub of salsa cheese spread.   Mix cheese into veggies. Turn gas off, and cover with lid for cheese to melt.
3. Add salt and crushed black pepper.
